Managed by producer Robinson Ortiz, this lot stands out due to its specialized Honey process. Following a controlled fermentation of 40 to 60 hours, the cherries are de-pulped while leaving a precise amount of natural mucilage on the bean during drying, a technique that significantly intensifies the coffee’s sweetness and body.

Thriving at a remarkable elevation of 2,000 m.a.s.l., the Castillo and Colombia varieties develop a dense and complex bean structure. With an impressive Q Score of 87, this honey-processed coffee represents a premium tier of Colombian specialty exports, offering a vibrant and dessert-like cup profile.
